COIL KICKOFF: "ASLUMA UY!" / “¡Está Bien Ácido!”: A Cross-Cultural COIL Study on Local Vinegar Solutions

“Asluma Uy!” / “¡Está Bien Ácido!”: A Cross-Cultural COIL Study on Local Vinegar Solutions

January 26 – March 10, 2026

The Senior High School Program celebrates an engaging COIL experience that connects the Philippines and Mexico through culture, science, and shared traditions. This initiative highlights how something as simple as vinegar reflects rich histories, local practices, and community knowledge.

Throughout the program, students explored and exchanged ideas on traditional vinegar production, comparing techniques, uses, and cultural relevance in their respective countries. The collaboration encouraged curiosity, critical thinking, and appreciation of diverse perspectives in food, health, and innovation.

Guided by Carmelo C. Bansalan, Jr. and Mary Rose L. Balili from San Pedro College, Philippines, together with Hector Ramirez Garcia and Cesar Miguel Jaimes Torres from Universidad La Salle, Mexico, the project fostered meaningful global connections among learners.

This initiative supports SDG 3: Good Health and Well-being, SDG 4: Quality Education, and SDG 17: Partnerships for the Goals, showcasing how cross-cultural learning can inspire collaboration and knowledge-sharing beyond borders.
